One Pan Salmon & Brussel Sprouts


  • 2 lbs trimmed brussel sprouts
  • 1 tbsp coconut oil, melted
  • salt & pepper, to taste
  • 2 lbs salmon fillet
  • 2 tbsp minced garlic
  • 1 tbsp oregano
  • 1 lemon


  1. Preheat oven to 450 degrees and grease a large baking pan
  2. In a large bowl, mix Brussels sprouts, melted coconut oil, salt, and pepper. Coat well and lay on baking pan. Bake for 15 minutes
  3. While sprouts are baking, prep salmon
  4. Squeeze half a lemon over salmon, then sprinkle oregano, salt, and pepper
  5. Once sprouts are done, add salmon to the same pan, and cook another 12 minutes, or until salmon is cooked thoroughly

Top with other half of lemon (sliced) and enjoy!
