Tilapia Ceviche

Ingredients

  • 3-4 Tilapia filets
  • 4 limes
  • Salt & Pepper to taste
  • 1 diced mango
  • 1 Roma tomato (discard seeds)
  • 1/4 cup cilantro
  • 1 small avocado, diced

Instructions

  1. Slice tilapia thin and in cubes
  2. In a bowl, squeeze lime over tilapia. Stir, coating thoroughly
  3. Cover bowl, refrigerate for three hours (the acidity of the lime juice “cooks” the fish)
  4. Add mango, tomato, cilantro, and avocado to mixture
  5. Add salt & pepper to taste

Serve with rice cakes or over a bed of greens.. enjoy!
