Easy Lasagna

Double the amount of ingredients shown = two batches cooked

Primary Ingredients

  • 1 lb ground beef
  • Lasagna noodles (I prefer oven ready)
  • 1 jar pasta sauce
  • Ricotta cheese
  • 1 egg
  • 2 cups Parmesan or Mozzarella cheese*
  • 4 cups Cheddar cheese*
  • 1/2 cup diced onion
  • 2 tbsp minced garlic

*I know cheese type matters to some, but I honestly use whatever is on sale at the time.

Optional Ingredients

I have changed these due to produce sales or what my kids feel prefer, but they’re all really good! Test out what your family enjoys.

  • Spinach
  • Boiled Eggs
  • Olives
  • Italian Sausage
  • Red Bell Peppers
  • Mushrooms

 

Instructions

  1. Brown Ground Beef. Add onion and garlic, cook for five minutes. Add pasta sauce, set aside
  2. IMG_3298Prep Optional Ingredients; cut, dice, boil eggs
  3. Mix Ricotta cheese, egg, and two cups Parmesan cheese
  4. Preheat oven to 375 degrees
  5. In a 9×13 pan, spread pasta sauce to line the bottom. Layer noodles, ricotta, meat, your optional ingredients, then Cheddar cheese. Repeat once
  6. Top with another layer of noodles, sauce, and remaining cheese
  7. Cover in foil and bake for 25 minutes. Remove foil and bake uncovered for 5 minutes. Let stand 15 minutes before serving

Tip: Oven ready noodles work really well when there is enough sauce and cheese poured over them entirely
