Ranch Pork Chops

  • 1 lb potatoes
  • 1 lb small carrots
  • 4 tbsp olive oil
  • 1 pack ranch seasoning
  • 4 bone in pork chops

  1. Preheat oven to 400 degrees. Line pan with parchment paper.
  2. Mix 2 tbsp olive oil and 2 tbsp ranch seasoning in a large bowl. Add carrots and diced potatoes, and coat thoroughly. Spread on pan.
  3. Using the same bowl, mix 2 tbsp olive oil and the rest of the ranch seasoning. Brush onto both sides of pork chops. Add to pan.
  4. Bake at 400 degrees for 20 minutes, flip pork over, and bake for another 20 minutes.

The potatoes are enough carbs to make this a meal, but my kids like to add dinner rolls also.. enjoy!
