- 1 lb potatoes
- 1 lb small carrots
- 4 tbsp olive oil
- 1 pack ranch seasoning
- 4 bone in pork chops
- Preheat oven to 400 degrees. Line pan with parchment paper.
- Mix 2 tbsp olive oil and 2 tbsp ranch seasoning in a large bowl. Add carrots and diced potatoes, and coat thoroughly. Spread on pan.
- Using the same bowl, mix 2 tbsp olive oil and the rest of the ranch seasoning. Brush onto both sides of pork chops. Add to pan.
- Bake at 400 degrees for 20 minutes, flip pork over, and bake for another 20 minutes.
The potatoes are enough carbs to make this a meal, but my kids like to add dinner rolls also.. enjoy!
